If one of your priorities is wine, you might want to extend your time in Evora and the Douro. Both are the biggest wine areas in Portugal. Cutting out Coimbra would make sense in that case. You could stop in Coimbra on your way from south to north but luggage storage can be problematic. Or, you could just focus on the Douro for your wine fix and day trip to Evora from Lisbon. But, with three nights in Lisbon, you would be shortchanging Lisbon.

I would suggest flying out of Porto if possible as that saves you back tracking. The order in which you list the cities/areas is good. But, with your limited time, you might have to give up one of the locations. Btw - hiking would be good outside of Lisbon (Sintra hills), and in the Douro. Otherwise, these really aren’t hiking areas.

Both Lisbon and Porto have very nice food tours.

Rather than splitting you time in either Lisbon or Porto, combine your time with that last night so you have 4 nights in whichever. That will save some backtracking.

Not a bad plan, but consider visiting Obidos, a small town with an ancient Roman wall. It is in the area around Sintra as I remember.

Consider taking some time in Regua and/or Pinhao upriver from Lisbon on the Douro.
