10 nights in Portugal - Need advice on last 2 nights

We're spending 12 nights in Portugal Jun-Aug. We'll be arriving from Spain (Seville) and looking to fill our itinerary. Here's what we have so far.

Lagos: 2 nights
Lisbon: 4 nights (day trip to Sintra)
Porto: 2 nights

We have two more nights to fill at this point and wondering what to see. Options are:

  1. Spend two nights in Evora
  2. Add a night to Lisbon to do a day tour to Evora and add a night in Porto for a day trip to Duoro Valley.
  3. Spend two nights in Coimbra or Duoro Valley.

We can also cut a night in Lagos and add it elsewhere. We're using it as a stopover to break the travel from Seville to Lisbon. We're essentially just spending 1.5 days though (arrive in the afternoon and leave early morning). Cutting a night would allow us to do 2 nights in Evora and add a night to either Lisbon or Porto.

You can take a train up the Douro Valley which is very scenic, and spend a
night in either Pinhao or Regua, both of which have nice hotel options. If you
wanted to visit some of the wineries in the valley, maybe 2 nights. The train
takes around 3.5 hours from Porto to the end of the line in Pocinho. Here is
