Looking for sugggestions for a driving tour in December. Love going off the beaten path. Love to stay in a castle. Open to suggestions and ideas.

We did a 28 day drive tour of Wales and England and loved it.
I would stay in Lisbon first for 4 days, including a day trip east to Evora.
Leaving Lisbon, I would spend a day in Sintra. Overnight somewhere nearby.
Portugal has Pousadas. They are kind of historic small hotels or B&Bs very nice. there is a great one in Obidos you might consider.

You might want to visit Cascais on your way to Porto.
Porto is on the Douro River. Stay about 3 days there, at least, you can go up the river on a boat, train or drive. Scenery is amazing.
There are other cities you might want to visit or stay at, like Coimbra.
