We hope to be in Poland in September. Has anyone been to Zalipie, it looks so lovely and unique. Would it be difficult to rent a car in Krakow and drive there for a day?

I don't know about the drive, but it seems you can probably get as close as Drabowa Tarnowska (less than 7 miles from Zalipie) rather easily by public transportation. You'd take the train or a bus to Tarnow and then a bus to Drabowa Tarnowska.
This blog post from 2029 suggests there is probably public transportation available all the way to Zalipie.
