I have to decide which of these 2 cities gets 1 night & which gets 2 nights. Appreciate any insight into which has more to keep an average tourist busy - or happily, uniquely not busy.
They are both charming, attractive towns with plenty to occupy you for a few days. My opinion, Torun could use two full days excluding any day trips. Wroclaw could use at least three days and many stay longer. Perhaps look for YouTube videos to get a taste what each city offers.

Well, this past summer I have visited both Torun and Wroclaw. While I enjoyed Torun, I have no hesitation in saying by far Wroclaw is your desired destination. Torun is cute, a rather small but pretty city. It was an enjoyable visit. But Wroclaw is a far more vibrant city - something of a college town. Beautiful historic architecture. Plenty of inviting eateries. A great walking city. In all honesty, there’s no comparison between the two. While you would probably enjoy Torun, you will love Wroclaw. Thus, Wroclaw certainly deserves the longer stay.

I agree that if you have just three nights and want to see both of these places, you should spend 2 nights in Wroclaw and one night in Torun.
When I went to Torun in 2019, I arrived around 1:30 pm, spent one night, and left about noon the next day. That was plenty of time to explore, and I just looked over my photos. I felt like I saw a lot.
I spent two nights in Wroclaw on the same trip. Unfortunately, timing was not ideal. I arrived on Easter Sunday and had the full day there on Monday, when a lot of things were closed. But I think a couple of days there would be sufficient to get a good feel for the city.
I went to both in December 2024 and spent 1 night in Torun and 2 nights in Wroclaw. I feel that was a great choice. We arrived in Torun mid-morning and I felt we got to see everything we wanted, including the Christmas market which was going on at that time. We were able to take Rick's guided walk through the Old Town, stroll along the river, and tour the castle ruins. We took the train to Wroclaw early the next morning. Although we probably could have done a little bit more with another night, I don't feel like I missed anything I wanted to see. I really enjoyed our 2 nights in Wroclaw and loved wandering around the city and ducking into places that looked interesting and searching for all the dwarves around town. There was plenty to keep us busy and I probably would have liked to stay another night but we only had so much time. Enjoy your trip, I'd love to go back!
We visited both last spring, and while Toruń is worth at least a night/day for its gingerbread history and shops, Wroclaw would be the better pick if you have to decide which gets the 2 nights.
Toruń has a phenomenal Georgian (not Polish) restaurant, Chinkalnia. We stayed at the Hotel Solaris.
Wroclaw has an outstanding restaurant, Młoda Polska bistro, with excellent food accompanied by piano music, There’s also the very good Cafe Konspira, with decor and menu history stories that recall the underground resistance that citizens operated to oppose the Communist government back when it was dangerous to do so. The little brass gnome statues scattered around the city also pay homage to those times. We stayed at the Art Hotel.
Another recommendation for the Hotel Solaris in Torun. We stayed there for the night we were there and it was in a great spot, although a bit noisy with the Christmas market going on, but we were there on a Friday night.
While Torun is cute for a day, and the gingerbread museum was fun, not not much the product itself. Even buying from the RS book, it was not what we expected in terms of taste or texture. Interesting, but I didn't even eat the bag I bought, Wroclaw is where you should spend more time. A great university and walkable town with beautiful architecture The Walkative tour was very interesting. We followed it up with a second day on our own, hunting for gnomes and going in churches the tour didn't have time for, as well as seeing the The Rotunda and Raclawice Panorama. Awesome painting and a great story. If you can, buy a ticket in advance, though. It was sold out the morning we went and a lot of people left disappointed. We could have used a third day in Wroclaw easily. Konspira is an excellent restaurant, especially the pierogi platter. Good selection and cooking styles. It was meant for two but I polished off most of it myself. You can never have too many pierogis just like nana used to make. Better than hers, actually! The decor in the back room is meant to emulate a home of a Solidarity supporter and was more interesting than the front of the house. We stayed at the Solaris. The staff was great but our room was badly dated, tiny and cramped even for a budget European place, noisy and uncomfortable in every way. But. it has an elevator if that's a concern. Breakfast was meh. It is well located and for a night or two it was ok, but I wouldn't go back.
