My husband is intrigued by the Polish winged Hussars. I saw there was a display of their armor in the Warsaw museums, but unfortunately Warsaw isn't on our itinerary right now. Has anyone seen displays in other museums in Krakow (or the surrounding area)?

That would most likely be in the Army/Military Museum in Warsaw. I have not been to any museums in Krakow where this can be seen.
Yes, indeed Polish Army Museum in Warsaw is the right place to look for. And the part of exhibition is called Sobieski Hall.

Though you can find some hussar armour in Wawel Royal Castle in Kraków on exhibition:
Sobrieski Hall...a very appropriate name in an appropriate museum. In Vienna not too far from the Albertina is a memorial plaque on a church dedicated to him, saw it this past trip.
