Does anyone have any favorite Polish castles (or palaces) they could recommend? We've heard from a Polish friend that Ksiaz is worth a stop, I was wondering if anyone else had recommendations. (Our current plans has us visiting the Southern half of the country).

I agree with Malbork and Wawel.
If you're going to the southern half of the country, I heartily suggest going to Pszczyna, used to be called Pless in Upper Silesia, to see the famous and historical chateau there. The town is not that far from the former capital of Upper Silesia Katowice.
Not castles per se (honestly, there are unique sites in Poland that top castles which are generally better maintained and represented in other countries - Malbork and Wawel are outstanding exceptions to this)...but also consider UNESCO and World Heritage sites including the wooden churches which are found in Southern Poland.

If you are in Warsaw, definitely see Wilanow Palace and Lazienki Park/Palace.
