I am looking at May 7 and bought the last two tickets in the afternoon. Yikes. I thought I had enough time. Can I get tickets at the ticket office that day? Sunday May 7

I am doubtful. I had the first entry time for my visit back in 2018, and by the time I got there, there was a "Sold Out" sign posted, indicating they weren't holding back tickets for sale on the day of visit. This is what I'd do in your situation:
Check the website every time you think of it, at least once a day. Perhaps some third-party ticket broker will return some unneeded tickets.
Ask the tourist office for suggestions when you get to Krakow.
Go by the factory as soon as can after arrival in Krakow (during hours the factory is open) and inquire/plead. Some of the spaces at the factory are fairly tight; I suspect that's why the entry policy isn't "Come one, come all; hand us your money at the door."
Check for tickets available at higher cost through tour companies. I know none of us like having to pay extra for tickets, but if you've bought two at the regular price, perhaps you can be philosophical about the extra charge on the additional tickets?

You have to book much more in advance than that for weekends. Weekends are busy.

We had an early entry time the day we visited and there was a SOLD OUT sign in the window when we arrived as well.
