We saw amber just about everywhere, from market stalls, to souvenir shops to high-end jewelry stores. Everything from carved chess sets to tiny figurines. I couldn't tell real from fake, but I think you're better off at the jewelry stores. We went to one named Schubert (I think) which we also saw in Warsaw.
I didn't see as much amber in Krakow as I did in Warsaw and Gdansk, and it does get to be overwhelming. I finally chose a shop in Warsaw's old town that had truly unique settings that suited my personal style. The cuff bracelet with a butterscotch yellow focal piece and scroll work on the sides is still a much-worn & complimented favorite 3 years later.
One more reason to add beautiful Gdansk to your itinerary :-)
