We will leaving one of the towns (depending on hotel availablity) and have one more night to book before driving back to Oslo for our flight home. It looks to be an 8 hour drive, so we would like to break it up with an interesting overnight accommodation. Do you have any suggestions for an interesting stopover or nice hotel or guesthouse somewhere in between? Thank you!

How about Brimi Fjellstugu and driving the next day the scenic route Valdresflye?

We drove Valdresflye and stayed at Vågåvatnet Feriesenter that night.
Hustadvika Havhotell was our lodging for Farstad.
I liked both of our choices.
