We plan to stay in Bergen on Monday and again on Wednesday with a Tuesday night stay in Flam during our trip to see the fjords. Is there a way to have our luggage stored in Bergen somewhere so we only have to take an overnight bag to the fjord?

If you're staying in the same hotel in Bergen on both nights, e-mail them and ask if they'll store the bag. Most will in this situation.
Yes, Norwegian (and European) hotels commonly offer left luggage storage. If you are returning to Bergen, leaving your excess luggage at the hotel is definitely an option. (Airbnb type accommodations may not be so accommodating with respect to left luggage arrangements).
