At a casual glance, both these hotel chains seem to occupy the same niche. Does anyone have any thought on how they compare?
Thon is primarily in Norway whereas Scandic has hotels throughout the Nordics. I’ve stayed in both chains although not recently enough to be able to compare. I would focus on location; both chains are good quality.
We found Thon to be nicer than Scandic. Thon hotels were smaller and more recently decorated. Scandic has larger hotels and seems to go for the conference market more than Thon. We were in Norway/Sweden in September 2022.
We left one of our Scandic hotels (Gothenburg) after one night as the room was filthy, the restaurant food terrible and the waiter laughed when we complained, the room safe malfunctioned and they took almost an hour to fix it, and there was an elderly naked woman in the lift. Scandic refused to refund our money even though we only stayed one night of our three-night booking. We went to the Radisson Blu which was just across the street and had a much nicer experience.
As mentioned, Thons are found in Norway while Scandic has hotels in many countries in northern Europe. Scandic usually offers good value for money and I've never been disappointed in a Scandic hotel, except once in Gothenburg when I thought the room was not up to standard. But on the other hand I've stayed in many Scandics where I've not been disappointed.
I note that the two negative comments about Scandic hotels in this thread refer to Gothenburg. Since there are multiple Scandics in Gothenburg, I think it would be useful to know whether both bad experiences occurred at the same one.
In my case it was Scandic Crown, but disappointed might be a bit strong word.

Our brief stay in Gothenburg was at the Scandic Europa.
