We will be traveling from Oslo to Bergen in early July. We might just do the NiN on our own and do the fjord tour on way to Bergen in one day, but were also wondering if there was a "good" place to stay maybe 3 hours outside of Oslo? If we do the train/fjord trip in one day, we'd be 2 nights in Oslo, 6 nights in Bergen. So we could pick a place on the rail line to stay a night if there is something that makes sense.

Do you mean a stopping point on the (inland) main rail line? The 8:39 train departing Oslo makes the stops below en-route to Bergen. I'm not familiar with any of them.
Of course, the standard Nutshell plan includes connecting to a local train from Myrdal to Flam, ferry to Gudvangen, bus to Voss, and train on to Bergen from there. The same ferry should stop in Aurland and Unredal, if you ask, with no detour off the route. I'd sleep in Aurland, or Rick also lists one accommodation in Unredal
