Does anyone have any tips for getting from the edge of the Lofoten islands (e.g. Reine) back to the US such that it doesn’t take 2 full days? The flights and ferries only seem to get you to Oslo too late for your flight back to the west coast (SFO). So then you spend a night in Oslo before flying at least 1 stop back to SFO (via the other major European airports).

Did you check flying out from EVE?
There is no major airport in the area so it's going to take a while. You can't cheat geography. And if you want to leave from Reine it's going to be hard, or a very early morning.
My suggestion would be to spend the last night in Narvik, or at the airport, that would make the trip pretty reasonable. SAS suggests a 6:40 departure from Narvik and a bit over 18 hours later you arrive in San Fransisco, 15:50 local time. Two changes required, in Oslo and Copenhagen.
