In all my years of travel I have never seen this before.
I had written to the hotel in May to book a quad room for early May 2021.
They asked me to contact them in June which I did and they told me to book on their
website, which I attempted to do.
When asked for my dates they showed that the room I had previously requested was not available for
the 3 nights we wanted BUT I could book for 4 nights.
I wrote and asked them why I could not book for 3 nights and have received no reply.
Is this a new norm? Has this happened to anyone else?

I did once find I could book a room at a small, budget-level lodging for two nights but not for one; I was using booking.com. Allowing four nights but not three seems rather odd; you do hear sometimes about 3-night minimums. Perhaps it's a website glitch. I'd keep trying, and I'd email again every couple of weeks or so.
Have you checked to see whether the room can be booked--at about the same rate--on booking.com?
Just tried to do a 3-night dummy booking of the quad unit for a range of 3-night dates in May, and it looks like that room does currently require a minimum 4-night stay in 2021. Yes, we have run into accommodations which require minimum stays of multiple nights, especially during popular weekend, holiday or especially heavy visitation seasons. It's not the "norm" by any means but not unknown either.

I did receive a reply from the hotel and indeed they wanted someone to make a 4 night reservation, which I did
not do. I booked somewhere else for the 3 nights, at a higher price I might add but it is at the height of Tulip season
so I wanted to make sure I could get what I wanted.
