Another vote for Hotel L’Ambassade on the Herengracht Canal.
We loved our stay in two of the bridge houses, if that kind of thing appeals to you.
Amsterdam has so many accommodations that choosing one place is difficult.
We used to stay out in the southern 'burbs by the stadium. But so many of the small B&B's have cashed in their places which have now been resold and turned into condos.

We stayed at the N29 B&B. Well located, wonderful hosts.
Go to booking.com and filter by accommodation type, neighborhood, price, etc. It'll give you some ideas (book direct though).
We stayed at Hotel Clemens, good location 15 min walk to train station, close to Anne Frank house and a boat tour we booked, and 10 min walk to Dam Square. It was nice, but nothing fancy, small room with a view over the street, but an okay breakfast (with a balcony) priced competitively for what I could find in the area when we booked.
If you're not committed to Amsterdam, consider staying in Haarlem. It's 15 minutes from Amsterdam Centraal but it feels a world away. We're so glad we spent our week there!
We stayed a week at the Nadia Hotel, that was fairly close to the Anne Frank House.
Cost was $1000 for a week.
Rooms were small, but people nice and breakfast was good. We walked all over the city, including the Rijksmuseum and Van Gogh museum
We just recently stayed at the RS recommended Hotel Fita in the museum district. Nice and quiet. If you stay in city center, it might be noisy.
@geovagriffith - Regarding Hotel Nadia. The google street view from April 2022 shows a lot of construction in the area and I'm pretty sure I walked thru there a couple of times this past May and encountered lots of road/infrastructure work. Was the construction a problem for you all?
I loved staying in the de Pijp neighborhood - there were so many wonderful restaurants and cafes. It's very near Albert Cuyp market and public transit - it took me less than 10 minutes to get to the major museums. It's a vibrant neighborhood filled with locals and very charming. I stayed at an Airbnb so I can't give you a specific recommendation, though.
We did not find that any construction in the area was a problem for us. In fact, there was no construction in the immediate vicinity of the hotel.
There was a lot of construction on a main street that was just west of the Dam Square, but that was about three blocks from the hotel and walking around it is not a problem.
