We really enjoyed That Dam Guide when we were there last October. Found him in the RS book. Highly recommend if you want a small group tour.

You don't need a guided tour to bicycle through the parks. We rented bicycles here:

and spent a couple hours riding around Vondel park on our own.

In February, we did the Free Walking Tours Amsterdam walking tour and it was very good. You tip at the end, whatever you want. They have other tours as well, and two other couples in our group did one the night before and said that was very good as well. I like that the groups are kept small. When we arrived, there were about 15 of us, so they split us into two groups and we went our separate ways. The guide was very good and we learned a lot, and it was just a lot of fun.

we did the evening canal cruise which was excellent to sit and relax seeing the lighted town and canals. it is a third party seller, if the company name is listed look at their site. we have used them for a few other tours without a problem.
