It would be helpful to know where your cruise ends, and what time if year you will be there.
That said, if it were me, I would head up to Hoorn, which is a very picturesque village on the coast northeast of Amsterdam and bike from around there. One nice trip would be to bike from Hoorn to Enkhuizen, which passes through some very charming villages including Venhuizen, which has a tulip-picking garden (only if you're there during tulip season, of course).

After our cruise ends, looking for a coastal area for 3 nights with nice biking!
Not truly "coastal" towns but allowing nice cycling in coastal areas. I'd say, from my experience, Leiden, Haarlem, and Amsterdam (and presumably The Hague or even Rotterdam) work out fine depending on your cycling level and expectations.
Examples of "coastal" rides we've done (that were lovely) are:
- Leiden - "Dunes and Sea Route" as recommended on the Leiden visitors website ( https://www.visitleiden.nl/en/routes/4116151459/dune-sea-route ). About a 22 mile loop from Leiden.
- Haarlem - 15 mile loop from Haarlem, out to Bloemendaal aan Zee, down to Zandvoort and back to Haarlem.
- Amsterdam - a longer expanded loop (including a canoe excursion with Waterland Safari) from Amsterdam, to Watergang, to Uitdam, down to Durgerdam, and back into Amsterdam (~30 mile loop).
- Haarlem - 15 mile loop from Haarlem, out to Bloemendaal aan Zee, down to Zandvoort and back to Haarlem.
From either The Hague or Rotterdam (or a loop with both & Delft too), you could ride to the coast and visit the Hook of Holland.
There are also a TON of other options way beyond the relatively small areas I mention. But, for simplicity sake, home-basing in Amsterdam or going a little outside to Haarlem, Leiden, or the Hague give you ready access to not just coastal rides, but the wonderful farmlands and neighborhoods along the way.
You can't beat the Wadden Islands if "coastal" and "biking" is what you are after. Personally I particularly like Terschelling.
Zeeland is also a good place. Head for places like Veere or Westkapelle.
