Would like to get advice about transportation between Ijmuiden Cruise Port to Amsterdam City Center. We only have 1 day in Amsterdam and would like the most reliable and efficient transportation method. Would taxi/Uber be ok to take? Thanks in advance.

Yeah, just take an Uber, especially if you have large suitcases. You can Google for prices

There are regular buses from Ijmuiden to Amsterdam. But without knowing which of two almost identically named cruise ports you are using at Ijmuiden I can't give more specific information.
There used to be a railway station accessible from both cruise ports and the ferry port, but it is no more.
Likewise the Flying Fast Ferry (by far and away the fastest route to Amsterdam) is no more- that was fantastic fun, zipping down the Canal at high speed on old eastern bloc hydrofoils.
