Take the high-speed Thalys train from Amsterdam to Antwerp (sometimes Brussels)and then transfer to a local train to Bruges. The Thalys uses airline style pricing so the sooner you book (90days allowed) the cheaper it will be. You can get tickets for the entire journey at this site:

Yes, you have to transfer. If you choose the Thalys train, your ticket can be good to Any Belgian Station, but the terminology you see will depend on where you buy the ticket. With that fare, the ticket is reserved to Brussels or Antwerp, but allows a "free" connection to Bruges within a day. It is cheaper to book Thalys in advance, generally on sale from three months ahead.

If buying a ticket on short notice, it should be cheaper to take the InterCity train to Brussels, which runs hourly, still just one connection, half an hour slower, and you pay all the way to your specific destination of Bruges. To see these options on Db trains schedules, you have to search "without ICE."
