I realize it matters which site you are on when you book train tickets. Any tips on which train to take from Amsterdam next May to meet up with the My Way France tour in Paris? I would like to take a high speed train if possible.

The only direct train between the two cities is the "Thalys" high-speed train, taking about 3.5 hours.
You can book it on thalys.com (the train operator's website) or nsinternational.nl (the website of the Dutch railways), typically 120 days before departure but sometimes less.
