While we are in Amsterdam this fall we want to catch a train from Amsterdam Centraal to visit friends in Zwolle. I can just look up times and show up at Centraal to buy round trip tickets without needing pre-purchased tickets or reservations, correct?

Correct,
NS (Nederlandse Spoorwegen=Dutch Railways) have a flat fare system, no discounts for advance purchase, no reservations and any ticket is valid on any train (except High Speed trains). And, a frequent service (at least one train per hour).
So just turn up at the station, buy a ticket and get on the next train.
