I am not used to booking BAHN train reservations, so I am seeking further advice for 2 adult train tickets (ages 67 & 70) in 1st class on May 31st from Amsterdam to Boppard, Germany at 10:37am, (arriving in Boppard at 15:44). The travel duration is 5:07 hours including one transfer in Köln for 41 min. It shows the seat reservation is included for 98 EUR. After choosing my selection, I am taken to a page and asked "Would you like to reserve a seat? I can then choose "Any, Open saloon, Open saloon with table. or Compartment". Will Open saloon with table or Compartment change the price of the ticket, if the reservation is already included, or is it just giving me my preference of the reservation? We would like to be most comfortable for a 5 hour trip.
Try to checkout and see what the total is before you pay.

All the reservation options should cost the same amount. This is not like a reservation for a night train, where the type of accommodations (sleeper, couchette, or reclining chair) come with different prices.
Note, if you choose a first class compartment or open saloon with table, you might share the compartment or table with two other people, and if you choose window seats, one of you will face backwards. Some people actually prefer open saloon without table so they can sit together alone.
If you click on "open saloon with table", it will show you a map of the car (like an airline seat map) where you can pick your seats. It should show 2 seats either side of a table by yourselves which you can click on and select then continue on the purchase. In the right hand box, you will see no added reservation fee, it is included with 1st class tickets.
Note, there are no reservations for the continuing regional train from Cologne to Boppard as this is a Mittelrheinbahn regional train, which makes all the stops. You could also take an earlier IC train that will give you the option of reserving seats and get you to Boppard sooner, but there will be a additional train change in Koblenz to an unreserved regional train for the last leg.
