I am using the 3rd edition of the guidebook, published in 2018, which has no recommendations for sleeping or eating Utrecht. Any recommendations, especially for sleeping?

I believe Nigel gave you a recommendation on this post (scroll down to the bottom). I also found one post from 2017 that recommends a hotel in Utrecht but you may want to run a search.
Keep in mind that Rick Steves curates his guidebooks much more than Lonely Planet, Rough Guides, Frommers, Fodors and so on, so some destinations have skimpy material or none at all. I would suggest checking one or more of the guidebooks mentioned above, or also the Utrecht travel forum on Trip Advisor. I just looked and there were a number of hotel recommendations.
