We will be arriving in Amsterdam via Dublin from the US. How much time can we anticipate for customs and baggage? Also, are there any ATMs we should avoid in Schipol? Does anyone have information on how much we can get from certain ATMs?

You can check for your specific flight on this page, select "arrivals" and enter your flight from Dublin. You can select dates out a couple of weeks: https://www.schiphol.nl/en/my-travel-day/today It will give you estimates of times, and if it doesn't yet have specifics it will at least give you an idea of how busy the airport will be ("peak" means you may have a wait).
You may not need any cash - last year I was able to pay for everything on a tap credit card, even small fees to use the restroom. The cash limit is often due to your own bank not the ATM you use, so check with your provider to see what your daily cash limit might be (you'll have to convert that amount to euros).
