I've seen some reviews online talking about what a crowded mess Schiphol airport can be. I'm flying out of there noonish on a Sunday mid-August. In everyone's experience, is getting there three hours early enough?

I think it is. IMHO Schiphol is the best airport in Europe from which I can fly to Seattle directly. The others are De Gaulle, Heathrow, Frankfurt and well Reykjavik - but is hard to get there from Prague (where I usually fly to).

Without any chauvinism: Schiphol can be busy, but is very well organised. Check-in and luggage drop-off are DIY, but with plenty of personnel around to assist you if necessary. Those three hours are enough.
