This may seem random, but some of the best RIBS I've had in my life were at Cafe de Klos in Amsterdam. (I say this as someone who has indulged in plenty of Texas and Kansas City BBQ.) Went great with a cold Heineken on tap. That's my top rec for anyone going to Amsterdam.

Nearby: De Tros, Café De Kleine Bes, The Bab (Korean), 4850 (wine bar & food). A little further than nearby but definitely worth the detour: De Kas. Lalla Rookh is a local favorite for Surinamese food (takeout only). The place looks pretty nondescript, they reopened last year after a fire, but the food is amazing.
Options in Amsterdam Centrum are endless, so I’m only highlighting two of my own favorites here: Alpha Deli (Amstel 47, close to Waterlooplein) for their crispy fresh Greek pies, specialty coffee and herbal teas. And the excellent restaurant Choux (close to Amsterdam Centraal) if you want to spoil yourselves a bit :)
Be aware that for most restaurants in Amsterdam you need to make a reservation for dinner, especially at De Kas and Choux.
