I am joining the Netherlands and Belgium tour this fall. I am flying in and out of Amsterdam
I was planning on taking the train to Ghent. Do I need to make train reservations? Please advise.

You will have to change trains in Antwerp. The ECD trains go every 2 hours direct to Antwerp and do not require reservations. The Eurostar trains, also got every 2 hours (staggered with the ECD trains) and they require seat reservations, but you should be able to get them when you buy tickets at Schipol Airport station. Despite any airline posted schedules, you cannot predict if you will arrive on time, so you should buy tickets when you arrive at the station with your luggage.
