I have been unable to confirm if you are now able to pay onboard trams and buses with just a cc/pin, or if you have to have a chipkaart. Anyone know?

I checked Syntusutrecht.nl and sounds like yes, they even take American Express on buses. It lists all major credit cards. It says you can pay in cash at service point locations. I have an OV chip card, never had a problem loading with my debit chip & pin card.
I was surprised in June on how many places in Amsterdam that are not taking cash anymore. On occasion my credit and debit card didn’t work when shopping at smaller boutiques & shops, paid in cash in those circumstances.
Thank you for your response. I am confused though on what they charge if you use cc. It seems it may be the single ticket price of 6, instead of what the OVC would charge. Maybe you only get the lower fare with the OVC? I can't get anyone to answer me from NS/GVB so I can decide which product to purchase for our trip. Any help is greatly appreciated.
Last August I tried with to purchase on-board a tram in Amsterdam with my chip & signature card...it didn't work. But it did work with the new ticket machines located at some of the tram stops in the city center.
