We are flying into Frankfurt then driving to Amsterdam. Have not booked a hotel yet in Amsterdam and wondering about parking and availability! Hotel websites are not clear.....

Few hotels in the city center have parking. Instead the city relies on massive underground parking complexes scattered throughout the center:

Are you sure you need a car at all. Frankfurt is well connected by train, and will be costly and useless in the city.
Parking's difficult in Amsterdam. We stayed twice in South Amsterdam at a B&B, and had to put a bunch of $ into a meter down the block to get a daily parking receipt that went on the dashboard. The B&B has since been broken into condominiums and went out of business--a common occurence in this great city.
We find accommodations in Amsterdam to be very expensive and especially crowded on weekends.
We last stayed at an incredible business hotel in Amsterdam out by the airport. The rooms are incredibly huge, and the nicest we've ever stayed in. Parking was free and their shuttle took us to Schiphol Airport where we caught the very short train ride into the center city. See: https://www.hotelschiphol.nl/en/

You do plan to return to Germany to return the car, right?
Update: I wouldn't recommend arriving in Frankfurt from the US and driving 431 jet-lagged kilometers to Amsterdam. Google Maps says that will take about 5 hours. But maybe you weren't planning to do that...
To paraphrase another poster, a car in Amsterdam is about as useful as a boat anchor. There is a direct ICE train every 2 hours from Frankfurt airport that will get you to Amsterdam Centraal in 4 hours and 14 minutes.
There are huge parking lots out at the airport. You could park there and take public transport in.
Is there a special reason you are taking a car to Amsterdam? You'd be slower than by train even if traffic is light. And I can't remember a single time that I did not get stuck in traffic in Amsterdam when I was there by car ...
Use the Park-and-Ride lots, they are very cheap. Book your hotel irrespective of parking, drive yourself there, unload, drive to a park-and-ride and come back by public transportation
