Which is better in your opinion?

Better for what? The Open air museum and the windmills in Kinderdijk are totally different things. It’s like comparing apples to chocolate.

I assume you are driving and are trying to assess whether take the route west of Utrecht (with a diversion to Kinderdijk) or a bit longer route over Arnhem (and visit the Openluchtmuseum).

As Dutch_traveler mentions they are quite different. The Openluchmuseum preserves historic buildings, barns, windmills, etc. from all over the Netherlands and aims to showcase live through the ages in the different parts of the Netherlands. Kinderdijk is all about their windmills and water management in a very Dutch picturesque polder setting.

It is really depending on your bucket list and interests and what you want to get out of it/want to remember: Pictures of rows of windmills along canals in a Dutch polder: Kinderdijk. Life in the Netherlands over the ages told through historic buildings and their interiors in a more forested environment: Openluchtmuseum.
