I like Winkel in the northern part of the Jordaan. Their Dutch food is traditional and satisfying and the apple pie (appeltaart) is excellent.
Dutch food isn't awesome (my mom is Dutch ;) ). Dutch pancakes are ok - you can get them savory or sweet. Obviously herring, for a snack. But one "traditional" meal to eat in Amsterdam, albeit not Dutch, would be the Indonesian Rijstaffel. Puri Mas in the Leidseplein is walkable from the Jordaan area. Burgermeester is in the Jordaan for some amazing gourmet burgers. I can't speak to Italian because its not a favorite so I don't seek it out.
I love homely Dutch food -- Stamppot, snerk etc. We always do it at least once when in Amsterdam. The pancakes don't do anything for me, but most people like them. I also have a secret love of toasties and bitterballen.
Our favorite Jordaan restaurant is De Belhamel; we had the table in the window at the juncture of two canals at dusk -- it was lovely and the food was good, but it has been a few years.
Thanks everyone. I decided to forgo Dutch cuisine mostly and went back to a Syrian restaurant I visited last year. But I did have fish and chips Dutch-style on the North Sea coast. Very lightly breaded fish. Quite liked it.
