Consider a reservation at Martine's Table for one of your dinners while in Amsterdam. She is located on the edge of the Red light district and about a 5 minute walk from Centraal Station.
Blauw is also a good choice for the rijstaffel - reservations also recommended.
Sounds like you have done your homework!
Have fun!

Thank you campbelldp; I booked a dinner for two with Martine! I would have never found this on my own and it looks like such a great experience. Much appreciated.

hey hey karynees
how fun, you'll have a fun time in amsterdam. we did a private canal cruise, also a night time cruise to see the lights, walked albert cuypmarket place. blocks and block of anything and everything which was a fun day. bought an oil painting picture from a booth/shop along the way, sat at a cafe to have a drink, appetizers and people watch. sat at rembrandt plaza an experience. had an empanada at argentine steak house. walked the red light district which was a very pretty canal zone, sat in a bar and sang neil diamond's "sweet caroline" with the other bar patrons, so hilarious, be careful walking along canals, don't wanna fish you outta them! haha day trip to haarlem walked around square had potterjers, yummy yummy
