On Friday, 11 Oct 2019, I'll be in Amsterdam starting our vacation, we have a dinner reservations around the SPUI area. The local train numbers are 2, 11, and 12 and make the stops at the SPUI train stop. My question is: from the Central Station, how often does the trains depart? What are the departing time intervals? Need to judge what time I need to be at the central station to catch the train.

The 2, 11, and 12 are not trains but they are trams. Think buses on rails that stop at every stop and you don't usually have to flag down. Most of the day there will be one every 3 or 4 minutes, later in the eveing they may be 10 minutes apart. Travel time is about 8 minutes. They will stop at Spui tram stop. You could actually walk it in 15 minutes.
If you need to get to Amsterdam Centraal you would usually be coming from out of town, but your question makes it seem like you are already in Amsterdam before dinner?
A question might be - where do you need to get to Spui from? You might not have to go to the beginning of the line.
You could also take the Metro 52 to Rokin (2 minutes from Amsterdam Centraal then a few minutes walk to wherever your destination is).
