I will be going to Amsterdam and Bruges in the fall, and probably will be with someone who will want an elevator. We would book 2 single rooms, and would like to stay at or below €100 per night. Old, simple, and quirky is fine, as long as it's clean; we have no need for lots of amenities. A central location is important, and we would pay more if necessary to be in a central location with an elevator. We prefer a hotel to an apartment. I would welcome your suggestions. Thanks

Hotel D'Amsterdam - has a small elevator, within walking distance to Vondelpark, Museumplein (Van Gogh, Rijks, etc.), Leidseplein (and bus to/from airport), easy access to trams, good restaurants in neighborhood, grocery nearby (mini fridges available in rooms so you can stock up on beverages or snacks). Rooms comfortable but simple, bathrooms are a little small - but plenty of space if each of you will be getting your own room. Free WiFi and meets your price requirement. You may also find some singles at one of the Ibis hotels (e.g., Ibis Centrale or Ibis Styles) if you don't have any problems with staying in a chain hotel - they'll have the elevator your travel partner is looking for.
Can't help you with Bruges. Places I have stayed at in Bruges had no elevators.

You amy also want to look into the RHO Hotel adjacent to Dam Square. I have stayed there twice and love the hotel and the location can't be beat. Breakfast is also included in the rate. They also have an elevator.
Also if you like Chinese food, great restaurant Golden Chopsticks is just a 10 minute walk away.

It's in a beautiful location right next to a scenic canal, and I believe they have free bicycles for use by guests. The ride to Damme along the canals is easy (about 30 minutes each way).
