I need help determining the most direct train travel from Haarlem to Ghent and return from Ghent to Schipol Airport. I currently am using Tripkey and wonder if I should use Tripkey for travel from Haarlem to Rotterdam and then purchase ticket from Rotterdam to Ghent or just purchase IC ticket from Haarlem to Ghent via Rotterdam? While in Belgium I would like to take advantage of over 65 travel fares. And then I need help returning from Ghent to Amsterdam Schipol Airport.

There are at least 2 changes
Haarlem to Amsterdam Centraal (change)
Amsterdam Centraal to Antwerp (change) and
Antwerp to Ghent.
And depending on your departure time going back this one is at 8:07 am
Ghent to Antwerp (change) IC train
Antwerp to Schipol Thalys train
otherwise the return is the same i.e. you have to make two train changes

You can also plan international train journeys through https://www.nsinternational.nl/en and buy e-tickets online in advance, but I do not know whether they offer the cheapest tickets on that route.
Note that for intercity trains (that do not require a reservation) you can take any train on that day, and trains usually leave at least every 30mins.
