Is the Grote Markt open on Monday? If so until what time? Could you buy snacks and make it dinner?
What would you do with a several hour timeframe there? We just want to experience some of the culture. Thanks!

We were there (9/10) just for an afternoon and evening. We arrived on a Sunday and left the next day. It was quite busy. The Grote Markt was open both days. We did RS walking tour of the city. We would have liked to have done the RS recommended canalboat tour and were surprised it was sold out on a Sunday and a Monday. ( Haarlem canal boat tour (Haarlemcanaltpurs.com) I was surprised how busy it was.
We walked around and along the canal to the very attractive windmill.
Most museums in Haarlem are closed on Monday so not much happening. You can walk through the old city centre visiting the hofjes (alms houses) and the Adriaan windmill (https://www.molenadriaan.nl/en/). Mondays are the most quiet days in the week.
The Grote Markt itself is a large square but with only two or three stalls on Monday (unlike the market on Saturday).
Bars and restaurants will be open but you won't find the buzz you will have during the Fridays, Saturdays and Sundays.
