This is who wee used in February 2024. Our guide was excellent and the group started out at about 15 people so they got another guide and we had two groups. One couple in our group had used them the night before for the food tour and said they had the best time, FWIW. Anyway, you tip at the end as there is no set cost.

we went with Sandemans. Free walking tour of Amsterdam. You tip what you think it's worth after the tour. We always tip 10 euros a piece if the tour is good.

pedestrian only marketplace for blocks and blocks with anything and everything. bought a small oil painting of holland, stopped for a cocktail and lunch, it was great.

different cruises offered. we did a private day cruise and also a night time cruise to relax with a glass of wine and see the gorgeous lights, another fun time.  dress warm & look if there is a light festival that time of year

we loved amsterdam, been twice with lots to do and see. just giving you some options to check out plus roaming around to enjoy. be sure things are opened during the holidays or short hours. have a fabulous time

We like the Rick Steves audio guided walks. Free!
If you don't mind splurging, Dennis from https://lovemycitytours.com is recommended by Rick Steves' book, and has been on the podcast. We had an amazing 5 hours with him last year, which included a private 2 hour canal boat tour. He met us online before our trip as well to get a general idea of our interests beforehand.
We did have luck in other cities with less expensive options or group tours, but the personal touch and the tailoring to our interests made the day really special. I doubt you'd find anyone more knowledgeable than him.
