After doing well for the first few days, I completely forgot to check out of my tram with my 7-day paper ticket pass. I read that it immediately stops working, and as I'd originally intended to use it more heavily in the next few days and paid $40 for it, is it possible to still use it?

You might want to check with the GVB people at the desk in front of Centraal station. I am sure it happens all the time. Since it is a pass, it should not be a problem, but maybe the computer will think you are still sitting in the tram car parked in the storage yard, so not work on your next tram ride. Maybe just asking the tram driver will clear it up.
