I am a student traveler trying to get from Venice to Amsterdam without flying. Suggestions? Budget bus? I've also heard hitch-hiking is very easy in Germany.

Both cities are rather far apart (1100km), and if cost is your major concern a cheap airfare is your best bet anyway.
It is not realistically to travel between Italy and Netherlands hitchhiking.

How old are you.
If you are under 26, it looks like the fare on Eurolines is about 96€.
By reserving well in advance from the Bahn website, you can get the EC (Eurocity train) from Venice to Munich for 49€. From Munich you can catch an overnight, non-night train, 5 train connection to Amsterdam for another 49€ or a connection including a reclining seat on a night train to Koblenz and other trains to Amsterdam for 51€.
