Canal Tours - Reservation necessary?

We will be arriving to AMS mid afternoon on a Tuesday & have the rest of that day plus two more full days in Amsterdam. Thinking of taking a canal tour that first evening before hitting a couple of museums the next day (reservations have been made). Was wondering if you can purchase same day tickets or if they need to be reserved in advance. Would like flexibility in case we’re too tired or get in later/earlier than expected. Also, any particular food/wine - optional canal tours that anyone would recommend?

I am in Amsterdam now, and yesterday we went on a lovely canal tour by a company called Voyage. The company is owned by a young couple that provide a lot of historical information. The tour lasted two hours, and they provided complimentary snacks and wine/beverages for purchase. There were 16 people on our tour. I have taken the big tourist boat tours, and enjoyed this much more. You have more interaction as opposed to a canned commentary. Message me if you would like the information.

When we were there in early February, we did two canal tours. One was with Flagship Amsterdam, and was the usual wine and cheese party boat. The other was recommended by our hotel and wow, what a difference, it was amazing! This one was up to 8 people, but we were the. only 2 people that night, so we had a private tour! Everything about it was wonderful, but it was also longer than the other at 90 minutes, and on a beautiful boat, snacks and drinks (champagne. etc) provided, and he was very engaging etc. Truly night and day from the usual ones. It ran us 55 euro pp. Here is the link for it.
