Hi,
I need to buy train tickets from Amsterdam to Eindhoven, and then Eindhoven to Maastricht for the following day. So far, I am only being prompted to buy one ticket at a time... is there a way to "bundle" my tickets so I only have to pay one service fee? Is this a unicorn? I could use any advice/websites to use. Thank you!
There is no service fee if you book directly with the company operating the trains :

FYI: trains in the Netherlands are mass transit commuter trains. This means you don't need to sweat buying tickets in advance. They don't sell out the fares are fixed, and the ticket on a specific route is good for any train running on it that day.
Also you have the option of just tapping in using a credit card before boarding and tapping out when exiting.
Who is charging the service fee? If you use the NS website or app, there should not be a booking fee.

No, you don’t need to buy train tickets. Trains in the Netherlands are mass transit. Trains have free seating and can never sell out. You therefore don’t need to buy tickets in advance and you certainly don’t need to pay a service fee when you buy. You can pay for your train journey by simply tapping in and out with your debit or credit card when you enter and exit the train station. This tap in/out system works on every single form of public transport in the entire country. See https://www.ovpay.nl/en for details.
If you do insist on buying a ticket in advance, the ONLY place to buy from is the official website of the Dutch National railway company https://www.ns.nl/en
