I will be going to Amsterdam for a couple of days in early August and then headed out after seeing the big sites so we can capture some other small cities and head into Belgium.
We have a week or so to play around with and will leave from Brussels.

So you're looking for a group tour with guide? A private tour with guide? A pre-configured tour with hotel stays included but no guide? Or just a pre-configured , but do on your own hotel reserving and navigation from point A -> B?
The point of my questions are to see what you mean by "organized", and how much assistance you want or need.
Cycling a two or three day ride from (or a loop from) Amsterdam is incredibly easy to do on your own and there are also all sorts of levels of assistance you can get.
What are you looking for and also, is it a loop out/back to Amsterdam or are you looking for a one way route?
If you're looking for a cycling trip with overnight stays, we did a self‑guided bike tour last year with Holland Cycle Tours (https://www.hollandcycletours.com) and had a really good experience. Everything was well-organized from start to finish, we basically just had to show up at the first hotel and everything else was taken care of. We went for a longer tour, but on their website they also offer one-week and shorter routes. They have a one‑way Amsterdam to Bruges (Belgium) tour that might be worth checking out for you. They allowed us to customize our tour, so I think you can shorten or extend your tour to fit your schedule.
Our tour took us through the real Dutch countryside and along the coast, and we had overnight stops in smaller cities outside Amsterdam like Leiden, Delft, Gouda. The maps/route directions and rental bikes we got were excellent.
