We will be in the Netherlands after tulip season - late May. Are there any tours of the other flower fields at that time? I’ve been googling and the sites all loop back to the tulip tours.

The short answer is: no.
The longer answer is that the flowers in the famous flower fields are all spring flowers such as hyacinths, crosuses, tulips etc. The tulips are the last to bloom and by the end of May they will all be long gone.
