I know that the countryside just north of Amsterdam is very scenic, but outside Zaanse Schans not so familiar with finding the best spot for windmills there. You can bike for instance to Ransdorp, Holysloot, Broek-in-Waterland, but no windmills there. However you combine it with a visit to Zaanse Schans, a collection of windmills specialy made for welcoming tourists.

You can take the train to Alkmaar and bike east to “De Museummolen”. But contact them first, they certainly can tell you more about the best place for spotting windmills. https://www.museummolen.nl/contact-en

Another option is taking the train to Dordrecht or Gouda and bike from there to Kinderdijk, famous for it’s 19 windmills still in their original location. Both cities are worth a visit too and Gouda famous for it's cheese. Contact the TI's for scenic biking routes.

Mike’s bike tours has a trip that covers a tour out of Amsterdam to North Amsterdam. We rented bikes from them and did it on our own. Bike routes are easy to figure out in the Netherlands as everything is documented and well marked.
The e-bike tour on their website does exactly what you describe so you could do it that way instead, if you preferred.

I just posted in another thread about the incredibly easy cycling options around Amsterdam (and beyond).

One really neat tool for the Netherlands and Belgium (adding bits of Germany and France, too) is their waypoint system which is wonderful to use and very easy to understand. I've taken to building my own routes to navigate to places I want to visit. Often, I take inspiration from other on-line sources to see how they get from A->B->C, but I also enjoy looking over a region and working with the app (online or on my phone) & google maps to figure out a route that my wife and I will enjoy. Once planned, I save it, and can pull it up when the time comes to try it out.

If you do any riding in the countryside (or even cities outside of Amsterdam) you will see the green circles with numbers in them that indicate the node you are at (or headed towards). They are literally everywhere on the trails & bike lanes. There is also a related hiking trail network using nodes.

I'd encourage checking out the website (or downloading the free app): www.fietsknoop.nl/

Here is an example of the Dunes and Sea route we did last week out of Leiden starting at node 86 up near the train station:
Start: Leiden node 86 -> 02 -> 53 -> 79 -> 49 -> 48 -> 61 -> 47 -> 43 -> 41 -> 97 -> 63 -> 62 -> 31 -> 96 -> 45 -> 93 -> 58 -> 34 -> 90 -> 88 -> 35 -> 06 -> 04 -> 16 -> 86 Finish (32.6 km)

Anyone could easily go to Leiden in the app, find node 86, and then add those additional nodes in order to form the identical loop we rode. I found that loop on the Leiden tourist site, but there exist many, many ways to see other routes, copy/modify them to your liking, and then just follow the route when you are in the town.

Also, the Netherlands, in general, is pancake flat. Wind is the usual "enemy" (or friend) so while an ebike might offer some comfort, it's likely - combined with regular breaks - not a requirement for most active folks.
