Travelling in May, trying to find the best way to travel between the two cities, though we prefer flight options,
how is Easyjet? but only an evening flight they have.

As discount airlines go Easyjet is the best of the bunch (avoid Ryanair at all costs). For the best price it's essential to book ASAP. The fare automatically goes up as the plane fills up.
Another option is the direct night train. It departs Centraal Station at 7pm arrives in Prague 9:30am the next morning. If you splurge for the deluxe private sleeper compartment, you get beds, bathroom with shower, table/chairs, and lots of cabinets to store your gear. It's a very comfortable and relaxing journey. Night trains are crap. Avoid them like you'd avoid Greyhound in US.
There are many daily flights, depending on the dates you choose, even a "full-fledged" airline will be affordable.

yep, train is horrid and expensive. there should be plenty of flight options from Schipol.
