Hi - We will arrive at Schiphol at 750am from Canada, and will have to collect luggage and then check in for another flight to Croatia later that morning (we don't have the second flight on the same ticket because we got an awesome deal for bus class seats and it was wayyyy more expensive to include the Croatia leg with those tickets so we have 2 separate tickets) - the Croatia flight (same day) departs at 1120am - is this enough time to grab bags/check in/security? Thanks!

In normal circumstances it should definitely be enough time. But if your incoming flight is delayed and/or the lines at passport control are long and/or it takes a long time for your bags to arrive and/or something else causes you to miss your next flight, you’re on your own. It also depends on who you’re flying to Croatia with and how long before departure they close their check in.
