Just wondering if I can use one credit card for tap and pay for myself and 2 others? Or do we each need to tap our own cards? Thank you.

You each need your own card. If you’ve linked your card to your Apple/Google wallet, one person can use the actual card to tap in and another person can use the phone and/or smart watch.

Just like Dutch_traveler said, you each need a way to tap that's different. It won't work if you tried to tap "in" for multiple people. That being said, my husband used my Chase travel card using tap to pay on his iPhone, while I used the physical card. That works just fine.
