Do you have a good guidebook? Rick Steves, and others, address eating, sightseeing, touring. I think Rick does a great job because he will give you a value-rating for a sight, tell you what is great about it as well as if it is skippable.

We wern't in Amsterdam very long and spent a lot of time walking around the canals and we followed a couple of Rick's walking tours. We took a boat tour. It was fine, would have been more enjoyable if the roof/windows were open but it was misting slightly. We really recommend the Van Gogh museum (either buy tickets in advance, or as I did, buy them online when we got to the museum instead of waiting in the line for tickets) We really liked the Anne Frank museum. (Order tickets online well in advance) We were sorry we didn't get to the Resistance museum.
If you can get a reservation at Martine's Table, you won't be disappointed!
We recommend Blauw for Rijkstaffel. Sama Sebo also very good.
We used the Blue Line for our canal cruise.
If you go to the Rijks, purchase a guided tour. It is well worth the money

Cafe Loetje out past Museumplein--zero tourists. Don't confuse it with it's sibling across from Centraal station--100 percent tourists. Great steaks, beer, wine, and finger food.
