Amsterdam lodging options for two friends to share

My best friend and I are leaving the husbands at home with the kids and heading on a girl's trip to Amsterdam for 1 week next summer. We've been friends for 20 years, have traveled together in the past, travel well together, and would love to find a hotel in Amsterdam with the following qualities:

On a canal,
Central to all the big sites and public transportation,
Near great restaurants,
Lodging that can accommodate friends with separate sleeping areas

I've seen many hotels with double and triples in the same room. Would love to know tried and true options for sleeping arrangements that accommodate friends that don't want to sleep in the same room.

Budget is flexible.

For a week's stay and wanting separate sleeping areas, I would definitely opt for an apartment. Even if you don't want or need a kitchen, the space is better with an apartment. Check VRBO, booking.com, airbnb, etc for one (or even two) bedroom apartments that sleep 4, these will have separate sleeping areas.

My sister, brother-in-law, and I spent 5 days in Amsterdam this past June. I spent a lot of time looking for suite hotels, or hotels with a 2-bedroom option, but had no luck. I looked at houseboats through Citymundo, and as others have suggested that might be a good option for you. We ended up using Booking.com to rent an apartment through Amsterdam City Center Canal View Apartments, and it was great. 2 BR and 2 bath, near the Amstel River on Stadhouderskade, very close to a tram stop and the Albert Cuypmarkt, and an easy walk up Utrechtsestraat to Dam Square and other sights. It was nice having a kitchen and our own space for breakfast and for a glass of wine in the evening, though we ate all other meals out. The apartment was cleaned every day, which I did not expect. My bedroom was quite small and the beds seemed narrower than twin size; maybe this was meant as a kids' room? But it worked well for us. Feel free to PM if you have any questions.

The Hotel Rembrandt had a "family room" when I stayed there many years ago. If I recall correctly there was a loft up a tiny staircase where my husband and I slept, and the boys stayed on twin beds below. it's not on a canal and I don't know about restaurants but it is central with "separate" -ish sleeping areas.
